This season we hear from our Head Pastry Chef as he tells us all about how he found inspiration for our stunning new Afternoon Tea menu in Gstaad with team learning about traditional Swiss dishes.
‘In Gstaad we ate very well indeed and tasted the traditional, local sweets such as Linzer torte, walnut tart, and the wonderful pralines and chocolates they had to offer.
As we took a ride in a gondola to the top of the mountain, I looked down onto the tree tops and it was those that inspired the pine and rosemary chocolate mousse on the top plate of the afternoon tea stand.
As we walked on the mountainside I noticed a small white flower in the grass. It looked like a long-petal daisy. As it transpired, it was an Edel Weiss. It is the national flower of Switzerland and even has a song named after it, sung by Christopher Plummer in The Sound of Music. The white chocolate we use, from Original Beans, is made in Switzerland and is called Edel Weiss!
A Mont Blanc tart is a classic of patisserie and so I felt that I should put it on my menu, as the mountain of Mont Blanc straddles the border of Switzerland and France. I have made mine a chestnut and raspberry flavour with a spiced tart shell and sweet frangipan.
The Toblerone is a notorious piece of Swiss confectionary, and a Swiss-themed afternoon tea would be amiss without nod to its fame! I made a blend of Alpine milk chocolate, hazelnut praline and toasted almonds and used a mould with segments to create a mini version of the well-known, spikey chocolate bar.
In one of the sandwiches, we offer a lovely gruyere with a homemade onion chutney on multigrain bread. Gruyere cheese is everywhere in Switzerland and is an integral part of a quality cheese fondue, so it would be madness not to include it in a Swiss afternoon tea.’

Described as ‘One of the world’s most Instagrammable restaurants’ by Vogue, this season our new incarnation - by Nikki Tibbles Wild at Heart - sets a beautiful winter scene in the snowy Alps, replete with snow drenched pine garlands and traditional Swiss cow bells nestled amongst the frosty foliage. Gstaad is located in the wide valley below what is arguably the most impressive mountain backdrop in the Alps – the Wildstrubel – it receives a high level of prestige and international fame for being one of the most luxurious ski destinations in the world. With notable regulars including Madonna, Valentino and the Ecclestone’s, the destination was also declared by Dame Julie Andrews as "the last paradise in a crazy world". In the past the silvery slopes have also been frequented by international superstars such as Sir Roger Moore and Elizabeth Taylor.
So come along and be transported to the snowy playground of the rich and famous as the world’s most luxurious ski resort takes over.

Make A ReservationThis season, Dalloway Terrace’s Head Pastry Chef, and Afternoon Tea of the Year 2018 finalist, Chris Dodd, has devised a menu of autumnal creations inspired by Æcorn’s three distinct aperitifs. The new Afternoon Tea menu at Dalloway Terrace reflects the best that autumn has to offer. Delights to be enjoyed on the new menu include ‘Conkers on a String’ (Chestnut and Milk Chocolate Cream, laced with Æcorn Aromatic) and a Sage & Lemon Tartlette (with Æcorn’s ‘Dry’ Liqueur). Guests are also invited to indulge in a Bay & Orange ‘Nogroni’ Trifle, and share a ‘Pine Cone’ (made from both Cru Udzungwa 70% Dark Chocolate and Pine Mousse with a Liquid Chocolate Centre).
New additions to the savoury menu include an array of autumnal treats, including Smoked Trout Rillettes on Guinness Bread, Sage Chicken Mayonnaise on Pumpernickel Bread and Cucumber Ribbons marinated in Aecon Dry Liqueur. The Afternoon Tea is available daily between 12pm and 4pm and is priced from £40 per person.

A pre-dinner drink has long been understood to prepare the palate and stomach for a meal, improving our enjoyment of food. Informed by 17th century English herbal remedies and inspired by the European aperitif tradition, the Æcorn collection is made from 100% English grown Pinot Noir, Chardonnay, and Meunier grapes.
Our delicious new tipples to enjoy on our golden terrace include Æcorn Elderflower Spritz (floral & crisp, made with Æcorn Dry, Elderflower Cordial & English Sparkling Wine and perfect with Superfood Salad or Burrata with Seasonal Tomatoes), Sweet But Sassy (fresh and citrusy, made with Strawberry-infused Æcorn Dry, Three Citrus Shrub, Non-Alcoholic Violet Bitters, SASSY Le Cidre Rosé and perfect with Grilled Organic Salmon or Chicken Broth). Non-alcoholic options on the aperitivo menu are Nogroni® (complex & intense, made with Seedlip Spice 94, Æcorn Bitter & Æcorn Aromatic and perfect with Steak Tartare or Wild Mushroom Risotto) and Golden Hour (bitter & refreshing, made with Æcorn Bitter, Clementine Juice, LE Soda and perfect with Paillard of Chicken). Earl’s Tonic (rich & aromatic, made with Æcorn Aromatic, Pineapple & Earl Grey Tea Shrub, Coconut Water and LE Soda) is another alternative to the alcoholic options on the menu – answering the age old question ‘What do I drink when I’m not drinking?’

A striking English floral installation with refreshing cocktails made with ingredients grown on the Ramsbury Estate in Wiltshire.
The seasonal cocktail menu - created by Giovanni Spezziga (General Manager of Dalloway Terrace and The Coral Room) in partnership with Scotch+Limon and Crucible - will offer a selection of summer serves, all priced at £13. Available for guests to enjoy on tap are The Bell, named after the Estate’s award-winning pub, featuring delicate flavours of Apricot, Black Olive and Rosemary mixed with Ramsbury Single Estate Gin, and The Estate Spritz, boasting Green Apple, aromatic Basil and sweetness from a Strawberry garnish, as well as Ramsbury Single Estate Vodka. There will also be a wider cocktail menu, including Ramsbury Reviver, Miss Dalloway Fruit Cup and Wiltshire Snapper, also incorporating Ramsbury Single Estate Gin and Vodka.

Breakfast guests are still able to indulge in some of Dalloway’s much-adored classics such as Buttermilk Pancakes, served with either Berries & Lemon Curd or Bacon & Maple Syrup, Rainbow Acai Bowl, Avocado & Grilled Plum Tomato.
Dalloway Terrace's new lunch menu is perfect for diners who are after a lighter option with dishes such as Sea Bass Ceviche, Burrata and a Hummus Open Sandwich to choose from.
Dalloway Terrace’s seasonal dinner menu includes tempting options full of ingredients sourced from the English countryside and beyond... including Dorset Crab on Toast, Honey-roasted Beetroot Salad and Warm Artichoke Salad. Dalloway Terrace – described by Vogue as “One of London’s most Instagrammable restaurants”- will be offering Londoners a taste of summer in the English countryside in partnership with Ramsbury, maker of single-estate spirits Ramsbury Gin & Vodka. From 24th July, guests will be treated to a two-month takeover at the renowned Terrace, complete with a striking English floral installation and refreshing cocktails made with ingredients grown on the Ramsbury Estate in Wiltshire.
A floral installation made from silk daisies, larkspur and delphiniums, in a nod to the wild flowers found on the Ramsbury Estate in Wiltshire, courtesy of master florist Nikki Tibbles Wild at Heart. Even the wood that the bar is made from comes from the estate to really showcase Ramsbury’s sustainable, closed-loop, quality-focused approach to production.

Irish Master of Wine, Anne McHale, is one of only 382 people globally to hold this prestigious title. She has been in charge of wine selections at Dalloway Terrace since 2016, and works closely with our sommelier Fabio dos Santos to update the list seasonally, making sure there is a wine for every palate and to match every dish. Here she tells us a little more about what’s new on the list for spring…
Spring has finally sprung, and what better way to enjoy it than with a leisurely meal on the beautiful Dalloway Terrace.
In our new white line-up, you’ll find the juicy Verdejo from El Quintanal in Spain, the silky Soave from Pieropan in Italy and the mineral and intensely refreshing Assyrtiko from Santo in Greece. If you’re looking for a special treat, you’ll also find that all of our fine white wines are now available to enjoy by the glass, including a more off-the-beaten track fine white from South Africa, made from the Chenin Blanc grape.
By the time spring comes, we tend to think of lighter reds – if that’s your style, you’ll really enjoy the medium-bodied but vibrant Bonarda from Mendoza in Argentina – something for Malbec-lovers to enjoy in spring, perhaps. If you’re a die-hard rich red wine drinker, then try our new opulent, suave Argentinean Malbec or our gorgeous organic Nero d’Avola from Sicily. And perhaps my favourite of all – the 2013 Estate Red from outstanding South African estate Keermont Vineyards.
Spring and summer wouldn’t be complete without rosé, of course, and our old favourites still hold pride of place, particularly our two from Provence, the delicately scented Grand Cros and the iconic Whispering Angel. To finish, here are my top pairings from the new menu.

an enchanting woodland of cascading amber leaves created by London florists Wild at Heart.
The stunning terrace - described by the Evening Standard as “One of London’s most Instagrammable restaurants”- boasts a canopy of preserved autumnal leaves in rich oranges and burnt reds.

Dalloway Terrace will be transformed by London Florists June in March and transport guests to the idyllic surroundings of the picturesque countryside in the south of France.
With a cascading canopy of over 1,000 dried flowers, the venue ensures to capture the wildness of the nature in the installation.
Alongside the floral oasis, Dalloway Terrace will also be embracing the summer season with a new cocktail menu in partnership with St-Germain; an afternoon tea menu with influences of elderflower throughout and a new seasonal menu bursting with fresh flavors. Make A ReservationIn celebration of Canada Day on Sunday 1st July The Coral Room will be hosting an exciting Canadian-inspired event.
Starting at 9am with a relaxing yoga session with Canadian brand lululemon's ambassador, Katie Silver, expert yogis and newcomers alike are invited to kick start their Sunday morning with a rejuvenating yet relaxing yoga class.
After the ‘detox’ follows the ‘retox’, with a Bloody Caesar Masterclass hosted by The Coral Room’s General Manger Giovanni Spezziga in collaboration with Crystal Head Vodka. Spezziga will be sharing his expertise to help guests create the popular Canadian version of the classic morning tipple, The Bloody Mary - where tomato juice is replaced with calamato juice creating the perfect Caesar mix.
The masterclass will be followed by a delicious brunch, where guests will be treated to freshly baked pastries, fruit bowls, buttermilk pancakes served with Canadian maple syrup and blueberries, whilst listening to Canadian born DJ Sam Frankl, who will be entertaining guests until 3pm.

Every dish is, in one way or another, connected to a key figure in Virginia Woolf's life,

After becoming more aware of the disastrous impact that plastic waste has on our oceans and wildlife, our most recent commitment has been to ditch plastic straws and replace them with recyclable paper straws. Running monthly until the end of June, the Tanqueray No. TEN Tables are looking to shake things up across London’s dining scene, aiming to bring guests together for an unforgettable supper club experience, where the delectable gin takes center stage. Known as The Coral Room, our new grand salon bar has been designed in collaboration with Martin Brudnizki Design Studios and will seat 90 covers.

At the beginning of summer, the team were lucky enough to visit the Silent Pool distillery near Guildford for a magical tour lead by India, the Brand Ambassador. On the tour, the team learned all about the 24 unique botanical used to craft the romantic and complex flavour which characterizes Silent Pool Gin.
